About the BeetEater
The BeetEater wasn’t always so ruthless towards vegetables. She was once an animal-loving omnivore growing up in a small town in the American South, eating the standard American diet. As a young child, she met a family of vegetarians, and for the first time, she made the horrifying connection that the animals she loved were also the food on her plate. She decided on the spot that she wanted to change her diet, but she didn’t really know how. Her father, a physician, supported her decision, as he recognized that this was a healthy lifestyle choice. Over the course of many years, the BeetEater gradually stopped eating meats, and started eating beets, and fruits, and greens, and all sorts of vegetables!
Today, as a home cook and as a merciless devourer of vegetables, she has discovered a love for creative cooking using oil-free, unprocessed, plant-based ingredients. If you know just a few vegan hacks, it’s a lot easier than some people think to cook this way and still feel like you’ve had an amazing, satisfying meal. The BeetEater hopes to make these hacks approachable to anyone who’s ever been curious about living a healthy, homemade, cruelty-free lifestyle.
